A Journey Along India's Coast
This summer, Koyal celebrates the vibrant seafood traditions of India's magnificent coastline. Our journey explores two distinct culinary regions: the West Coast, stretching from Maharashtra to Kerala, and the East Coast, from Bengal to Tamil Nadu. Each region tells its own story through unique ingredients, spices, and time-honoured cooking techniques.
Our first chapter is dedicated to the West Coast, showcasing authentic regional seafood dishes prepared with traditional flavours and coastal spices. To elevate the experience, each course is thoughtfully paired with our carefully selected, spice-driven wines, creating a unique six-course tasting menu that celebrates the harmony of food and wine.
